Makes 2 cornflake chicken burgers
Overall prep time: 10-15 mins
Cooking time: 5-6 minutes


Chicken breast fillets:

2 small chicken breast or one large chicken breast

Mixture for plain flour coating:

1 cup plain flour
1 tsp garlic powder
1/2 teaspoon of black pepper
1 tsp chilli powder
1 egg
1/2 cup of milk


Mixture for cornflakes coating:

1 cup bread crumbs
1 cup crushed cornflakes
1 tsp garlic powder
1 tsp chilli powder
1 tsp black pepper
1 tsp paprika
1 tsp oregano
1 tsp salt


  1. Firstly thoroughly wash the chicken.
  2. Once washed place the chicken on the chopping board and chop away any fatty bits just so there is only pure breast left.
  3. If you are using 2 small breast fillets, with a rolling pin, flatten out both pieces of chicken (and take out your life’s stresses), not too flat but just so they even, and can cook evenly.
  4. If you are using a large chicken breast, all you have to do is cut that breast in half long ways horizontally.
  5. Once you have prepared the chicken, set aside.
  6. Take 2 bowls out and set one of them aside and they will be for the cornflake mixture.
  7. Put all ingredients from the plain flour coating list and combine thoroughly. Set aside.
  8. Using the other bowl put all the ingredients from the cornflakes coating list and also combine thoroughly.
  9. Take another bowl and crack an egg and the 1/2 cup milk and whisk together.
  10. About this time turn on your deep fat fryer, or your pot of oil, or whichever method you are using to fry the chicken.
  11. Align your bowls in order of what gets applied first. Egg and milk mix, flour mix, cornflakes mix.
  12. Dip the chicken into the egg and milk mixture, then into the flour, then back into the egg and milk mixture then into the cornflakes.
  13. Put a generous amount of coating, this will make it crispier.
  14. Repeat same step with second breast.
  15. Once the oil is hot enough put both breasts in, or one at a time whichever way you manage best.
  16. Cook for 5 mins turning over the breast fillet on each side at least once.
  17. Once it has got that deep golden colour remove and place on kitchen tissue (good quality) so it soaks up all the oil and the chicken stays crispy.
  18. Take out your burger buns and the sauces and salad you like assemble your crispy chicken burgers.
